Feta and cheddar is a great combination and would still have that complimentary sharpness but without the blue which throws many people off. <br /><br />If the onion lost too much flavor, you could try blanching it for a bit less time (just until it's tender enough to remove some of the inside - only the outer 2-3 layers should be tender, the inside will still be firm) or use a stronger tasting onion.
